This keto chicken casserole recipe is a straightforward one-dish meal that comes together quickly and almost bakes itself.

It is the ideal weeknight meal because it can be prepared in under 40 minutes. Additionally, if you have any leftovers, those are fantastic too!

This hearty casserole is tasty, easy to make, and keto. It takes only a few minutes to prepare chicken that has already been cooked. Although the chicken must first be cooked, this recipe is still quite simple to make.

The Components

  • Rotisserie chicken: If using rotisserie chicken, take sure to remove the skin first. In a dish, it will have a rubbery feel.

  • Black pepper and Kosher salt: You might want to use less salt overall if you use fine salt.

  • Mayonnaise (I like mayo prepared with avocado oil), sour cream, Dijon mustard, garlic, herbs, and shredded cheddar are all ingredients in the sauce.

  • Topping: Scallions and bacon bits.
