These keto pancakes are extra thick and fluffy, and only 5 ingredients are required! They require no grains or sugar and are quick and simple to prepare! Per serving, there are 3 grams of net carbs.
These pancakes may appear to be very fancy, but I assure you that they are extremely simple to make! There are only five main ingredients required, and no sugar or grains are required! The pancakes are thick, extra fluffy, and soft in the middle! They taste like diner-style pancakes with no egg or almond flavor!

The Components
Room temperature eggs are preferable.
Milk of choice- I used unsweetened coconut milk, but any milk will do.
Melted and refined coconut oil (to avoid any coconut flavor!).
Almond flour- Use blanched almond flour rather than an almond meal. Blanched flour produces a fluffier center and lighter crumb.
Baking powder- Gives the pancakes some rise and stability.
Optional granulated sweetener of choice I prefer syrup on my pancakes, so I usually leave it out entirely.
Preparation
Begin by whisking the eggs, milk, and coconut milk together in a small bowl.
Separately, combine the almond flour and baking powder.
Fold the dry ingredients into the wet ingredients gently until a thick batter is formed.
Grease a large nonstick skillet and heat it over medium heat.
When the pan is hot, scoop out 1/4 cup portions of the batter and cover.
Cook the pancakes for 3-4 minutes, or until bubbles appear around the edges.
Flip the pancakes and cover them again, allowing them to cook for another 2 minutes.
